USE THAT "MISE EN PLACE": It is only the second day of school and Chef Newman's first period class was busy at work prepping snicker doodle cookies for a board meeting. While they were getting the ingredients, Chef took the time to tell us about using "mise en place" (a French term meaning to organize the ingredients and have them measured out). "It is easier to organize and measure out the ingredients first, than putting them together", said Chef .
